The R & D team at SKOPE have been hard at work behind the scenes for the last 18 months or so putting together a revolutionary new refrigeration range for the retail hospitality sector.

How Safe Is Your Business?

Handy tips to keep your customers and staff safe (and avoid possible council penalties):

 

1. Use The Correct Cutting Boards & Utensils

One of the easiest ways to eliminate (or greatly reduce) the threat of cross-contamination in your kitchen is by implementing and strictly adhering to the universally-accepted coloured cutting board system:

  • Blue: Seafood
  • Green: Vegetables and Fruit
  • Yellow: Poultry
  • Red: Raw Meat
  • Brown: Cooked meat
  • White: Bakery and Dairy

Many kitchen utensils such as knives and tongs now also come in coloured ranges to match the appropriate food types and assist kitchen staff.

2. Ensure It’s The Right Thermometer For The Job

To prevent the growth of bacteria, food must always be stored at and cooked to strictly-defined temperatures. Therefore, it’s critical that you’re able to accurately measure and record this data.

There’s a huge range of thermometers available which serve many applications, but for basic food safety a thermometer with a probe which is accurate to +/- 1C is required by law.

High-care workplaces such as hospitals and aged care facilities will often have policies which require the use of various types of thermometers to check the temperature of food surfaces and food storage areas too.

Failure to comply can result in huge penalties so make sure your kitchen is equipped with everything it needs!

 

3. Use Daydot Food Labels Effectively

These small labels are available in dozens of different formats and are a brilliant method of organising stock rotation and ensuring your food stays fresh and safe for consumption.

The best of 2014

Relive some of the exciting openings, special occasions, and countless highlights of 2014!

Wow! We’ve nearly hit the end of December and we’re sure there’s plenty of others wondering where the year has gone! The past 12 months has been an exhilarating ride to say the least. Not only have we been involved in some fantastic new projects, we’ve also made some big changes of our own which are already benefiting our customers and our business and will continue to do so for years to come.

Below is a snapshot of our year in review, and a sample of the amazing highlights we’ve enjoyed:

New Restaurants, Cafes, & Bars:

It’s been a huge year of growth for the Brisbane restaurant and cafe scene. The ever-popular Eagle Street precinct is now overlooked by two of the year’s most anticipated restaurants: Madame Wu and Navala Churrascaria. While their ‘Asian Fusion’ and ‘Brazilian BBQ’ cuisines geographically couldn’t be much further apart, what they have in common is hundreds of customers pouring through their doors each night to see what all the fuss is about and leaving extremely impressed.Madame Wu3

Westfield Garden City’s huge renovation and expansion has generated a lot of hype in the southern suburbs, especially it’s tropical-themed Town Square complete with cascading pools, palm trees, and sun lounges. This overhaul coincided with the refurbishment and renaming of an old favourite; Beach House Bar & Grill has now become Hotel Beach House and is home to a huge range of outdoor bar and dining areas, a TAB section, and a beer garden.

Another exciting development around Brisbane has been the rapid growth of Hakataya Ramen. In this year alone we’ve supplied the equipment and smallwares for their Brisbane CBD, Indooroopilly Shopping Centre, and recently-opened Eight Mile Plains stores. It seems their delicious, traditional Japanese soups are becoming more popular by the day, and we look forward to involvement in future projects – which at this rate are only just around the corner!

Hakataya Indro

Moving north – a long way north! – it is great to see that several years after being devastated by tropical cyclone Yasi, the rebuild of Dunk Island Resort is well underway and a reopening is getting closer. Along with the fit out of the Government’s Manus Island Regional Processing Facility, this was definitely one of our biggest logistical undertakings of the year and further demonstrates our ability to successfully coordinate and cooperate with customers, suppliers, and transport companies on large-scale projects wherever the location.Dunk Island2

New Head Office & Distribution Centre

In May we relocated our National Head Office and Distribution Centre from its home of four years at Albion, and we’re now well-established in our new 2000sqm premises at Eagle Farm.

The benefits were instant, and both our customers and our staff are enjoying the added convenience, efficient service, and increased stock capacities. We’ve now got most of our staff under the same roof which means our customers can seamlessly interact with staff across all of our departments, and our staff can also work closely together to ensure every customer’s need is professionally and promptly attended to.

Showroom Renovation & Demo Kitchen

Our convenient and centrally-located Fortitude Valley showroom still remains the best place for browsing our stock lines or picking up the supplies you need on-the-spot, and has undergone a few changes of its own over the last couple of months.

A new shelving layout has made it easier than ever for customers to navigate the aisles and quickly find the products they are looking for.

We’ve also got a brilliant new display room at the rear of the building which is home to the most unique, striking, and up to date stoneware and crockery trends on the market. Dozens of the items are exclusive to Hospitality Superstore and we invite you to come in and see for yourself!

If you’ve been lucky enough to visit the showroom during one of our special live cooking demonstrations during the last 10 weeks you would’ve noticed that we now have a big range of commercial cooking equipment installed and ready to go! The Unox combi oven, Irinox blast chiller, Skope refrigeration, Turbochef speed cook oven, and Hobart undercounter dishwasher are all getting regular workouts, plus we’ve got suppliers demonstrating other products on a weekly basis. Fine Food Australia 2014 Highlights

Hordes of visitors descend on Melbourne to sample the the Foodservice and Hospitality Industry’s latest and greatest

Fine Food Australia’s 30th anniversary deserved an industry showcase huge enough to match the occasion, and that is exactly what was delivered over 4 very busy days at the Melbourne Convention & Exhibition Centre.

From Monday 15th September to Thursday 18th September over 27,000 visitors saw, touched, and tasted the huge array of products on display from over 1,000 exhibitors. Forty-five countries had products represented, ranging from the latest cooking technology, to refrigeration, hospitality supplies, and an enormous fresh food and produce section. The aisles within just Dairy World, Drinks World, and Confectionery World seemed to stretch for miles, let alone the Gluten Free and Meat sections adjacent to them!

Hospitality Superstore are regular exhibitors at Fine Food Queensland’s bi-annual trade fair in Brisbane, and visited Melbourne to ensure we stay ahead of the game and continue to offer all our customers every opportunity to remain at the fore of their sector.

  1. Exclusive ‘Starfire Pro’ burner design

    Two-piece cast iron burners have been engineered to deliver exceptional heat distribution across the entire cooking surface, as well as acting as a heat sink to maximise efficiency. This is further boosted by unique ramping of the gas inlet which channels gas to all parts of the ‘Starfire’ burner and prevents valuable energy being lost from underneath pots and pans. Other key features include flame failure on all burners as standard and standing protected pilots for each burner to ensure safety and peace of mind.

  2. Bigger, flatter cooking surface

    Garland’s 692mm deep cooking surface is the largest in the industry and has been designed to make use of all the space available. As a result, the 6 burner cooktop will comfortably fit 6 x 300mm pots, and this convenience is available across the range’s 4, 8, and 10 burner variants too. The cooktop’s grate has also been designed to minimise any gaps and eliminate raised edges so that pots and pans can be slid along and across the entire cooktop (including plate rail) with complete ease and without the danger of tipping.

  3. Unique, heavy duty oven construction

    The 900mm wide series’ oven will easily fit a full size sheet pan in either direction. In fact, its 667 x 660 x 330 (mm) cooking chamber will fit two 1/1GN trays side-by-side in either configuration. The oven is powered by a 40MJ cast iron ‘H’ burner which provides fast and even heat distribution as well as retaining heat to ensure high-efficiency. A fully-porcelain interior ensures energy stays trapped inside the chamber and is used to heat the food, not the door itself! The oven’s clever design also includes concave inner walls which naturally encourage air circulation. This produces even cooking results which resemble a convection oven far more than the static ovens of Garland’s competitors. Finally, Garland’s heavy duty door has become famous for it’s unmatched strength and durability. Able to hold a massive 204kg on it’s open hinges, the oven is more than capable of withstanding the frequent and rough opening and closing that comes with a busy kitchen.garland oven

  4. Convenient and easy maintenance

    The last thing kitchen staff want to be confronted with after a busy service is a daunting and difficult clean up. Garland has designed their equipment to be kept both looking good and clean and hygienic with minimal effort. The crumb and drip trays have been separated into easy-to-manage 300mm wide sections which are a lot safer to carry. Within the cooktop, the grates and entire burner assembly can be removed to be individually cleaned, plus also leaving an empty ‘shell’ which can be quickly wiped out with a damp cloth without any fuss. All of these parts have been configured so there is only one way to remove and reassemble the cooktop – so anyone can be taught the procedure and it’s obvious when it’s ready for use again. Finally, the oven trays and guides slide out to make wiping inside the oven as easy as possible with no hard to reach areas.

  5. Twin-burner target top

    Effective multi-tasking is critical in any kitchen operation, and Garland’s twin burner target top makes this easier than ever. Unlike other target tops on the market, Garland offers chefs two six-knuckle cast iron burners which produce a massive 73MJ.     In order to create the most functional kitchen line-up possible, Garland’s cooktop and oven ranges stretch from 600mm wide to 900, 1200, and 1500mm wide.
